Our Prime Beef products consist of Angus, Hereford, Simmental, Continental, Black and Red Baldy, and Corriente breeds. Our goal is to raise cattle to finish at the USDA “Prime” graded level — but only between 18% and 28% of all (every farm or ranch) beef reaches the Prime grade. The USDA uses a system that evaluates marbling, texture, and tenderness. What does not make Prime grade is classed as either Choice or Select. We will be offering all the grades and cuts that suit everyone’s budget and culinary tastes.

Utah is home to around 810,000 cattle (as of the 2018 US Census) — that’s about one for every four people in our State. Beef is the single biggest agricultural product sold in Utah, accounting for about 21% of the total agriculture market value. Many of them are exported outside of Utah to be processed and then sent back into Utah for sale in grocery stores and butcher shops. Tabiona Steaks intends to change this dynamic and grow and harvest far more beef within Utah for the benefit of our residents and loyal customers.

What is Prime Beef?

“Prime” represents the highest quality grade of beef, as determined by the United States Department of Agriculture (USDA). Just as with other meats that earn the grade, prime beef offers consumers the most extraordinary tenderness, flavor, and juiciness. Since less than two percent of all of the beef produced domestically receives the prime designation, it’s clear that these steaks are of superior quality compared to other offerings in the marketplace.

How is Prime Beef Graded?

The USDA grades beef in two manners: quality and yield. When assessing quality, graders inspect the ribeye muscle located between the 12th and 13th ribs, examining the color, texture, firmness, and amount of marbling. Age is also a consideration, as younger beef grades higher than older beef. Yield grade is determined by the amount of usable lean meat available. To confirm that your meet is graded prime, look for a purple stamp marking with the words “USDA Prime” inside a shield.

What Kind of Cattle Produce Prime Beef?

You should know that it takes a lot of care and consideration to bring a calf to the point where its meats are determined to be prime. Cattle that reach full maturity earlier are ideal for producing prime steaks, as they’re able to go to market at an earlier age – always a factor when you consider that older animals are excluded from the grade. Our cattle breeds, such as Angus and Hereford, are explicitly chosen due to the fact that they’re known for their high quality, premium tasting meat. We then carefully control both diet and environment in order to raise them to finish at the USDA’s prime grade.

Where is USDA Prime Beef Sold?

There’s a chance your local grocery store doesn’t carry prime beef, instead choosing to offer choice as their top designation. Higher-end stores and specialty meat markets are a more likely source, with prices that reflect both the superior quality and markups passed along throughout distribution. One other consideration with shopping locally is the availability, or lack thereof, of your favorite cuts.
