Slow-feeding gives our cattle ample time to develop generous amounts of marbling, which elevates the eating experience of Black Angus beef. Over time, the breed marbles naturally and abundantly, for extraordinarily rich layers of complex, buttery beef flavors. Not all Prime is created equal. Up until a decade ago, only 1-2% of all cattle harvested in the US qualified as Prime. However, in the last decade the USDA Prime category has recently grown to about 6% of harvested cattle.
