OUR PROCESS

Sustainable livestock cattle Farmers are finding new ways every day to raise animals humanely, to produce better quality products, but also to build soil and sequester carbon, mitigating the effects of greenhouse gases. At the heart of sustainable livestock production is well-managed pasture, forest, or rangeland, where animals can move and graze freely.

At the very least, farmers match the pasture area they have to the number of animals, so that the animals do not overgraze the land. Cattle farmers rotate animals from one parcel of land to another.

There is one truth that became the essence of Tabiona Steaks since 1847 and is part of every decision we make:

“Animals raised on pasture are generally healthier and under less stress than those raised in confinement.”

Why does that matter?

How healthy our animals are, the way they have been fed, finished and the level of stress they have experienced in their lifetime has a tremendous impact on the taste, tenderness, juiciness, concentration of monosaturated fat, and healthiness of the meat we produce.

We aim at proposing to our customers, businesses, restaurants and partners the best of the best, helping them discover the subtilities between different cuts and grade of beef. All this 100% organic, all natural and without any antibiotics or added hormones.

A major benefit of raising animals on pasture is that our products are healthier for you. For example, compared with feedlot meat, meat from grass-fed beef, elk, and bison has less total fat, saturated fat, cholesterol, and calories. It also has more vitamin E, beta-carotene, vitamin C, and a number of health-promoting fats, including omega-3 fatty acids and “conjugated linoleic acid,” or CLA.

Our processing plant experts have years of experience with beef and provide customers with the healthiest possible meat. The processing of livestock which includes animals such as cattle, sheep, swine, and goats is governed on a national level by the Federal Meat Inspection Act, and implemented through USDA regulations

One of the main components of that oversight is the requirement that the slaughter of livestock and processing of meat products be subject to continuous inspection by government inspectors.  Additionally, there are various labeling, sanitation and building requirements.

Further, for plants slaughtering and processing livestock, there are further requirements based on the Humane Slaughter Act.

Our Utah plants are supervised and controlled by the State Inspection program in Salt Lake City.

The packaging of our products is made internally. Materials designed for wrapping meat have specific functional qualities, including low moisture/vapor transmission rates, heat shrink ability, stretch, pliability, strength, and the ability to retain their protective characteristics over a wide range of temperatures and conditions.

Films for fresh meat packaging are designed to allow a small amount of oxygen to pass through the film, thus maintaining the oxymyoglobin that gives meat its fresh red color.

The U.S. Food and Drug Administration (FDA) approves all food packaging materials. Any material intended for use in food packaging must be formulated in compliance with FDA requirements for its intended use. The manufacturer of a new material must petition FDA and provide data proving the material is safe to use if it is not already regulated for the proposed use.

The delivery process is easy and safe. We deliver your products frozen in 2-4 days in sealed Styrofoam boxes with dry ice to keep it from thawing. We are federally USDA approved allowing us to ship to the 50 States. We are using USPS Priority mail to make sure you get your fresh product on time.
