Also known as the "poor man's rib-eye," the American Wagyu chuck eye steak comes from the upper shoulder of the cow. Tender rib-eyes come from the sixth to twelfth ribs of a cow. Butchers cut the chuck eye from the fifth which is the very next rib towards the chuck primal, offering a similar taste and texture to the rib eye steak at a lower cost. The delicious intramuscular fat that defines American Wagyu beef is best found in this Chuck eye.

American Wagyu beef is highly marbled and graded on Japanese “Beef Marbling Standards” because the USDA grading scale does not have a designation for beef that is so highly marbled.
