Our American Wagyu flank steak is slightly leaner than a skirt steak. Suitable for grilling, roasting and even, broiling, we slice it thin at a bias across the grain. Sliced this way through those tough fibers will shorten them and allow to have an easier-to-chew and eventually more tender bite of beef.
