A bit more chew and a little less marbled than the American Wagyu filet or rib eye, our American Wagyu New York Strip has nothing to be ashamed of. Its impeccable tenderness, juiciness, flavor and fine texture won't let you down. This cut will satisfy you any way you cook it. Just be warned that some can run a little lean, making them less resilient to overcooking. Our American Wagyu New York Strip is cut from the “short loin” section of our cows. A strip steak without the bone is called a “New York Strip Steak”. When a bone is left attached to the strip, it is either called a “Bone-in New York” or sometimes a “Kansas City Strip.
