There are four breeds of Japanese cattle that are thought of as Wagyu: Japanese Black, Japanese Brown (referred to as Red Wagyu here), Japanese Polled, and Japanese Shorthorn. Most of the Wagyu cattle imported to the United States were Black, with a few Red shipped as well. Fullblood Wagyu is 100% genetically pure, with both the bull and cow traced back to Japanese herds. Purebred Wagyu comes from a fullblood bull and a crossbred cow, while Wagyu crossbred typically comes from a Wagyu-Angus breeding pair. Pairing the high-quality Japanese breed with the hearty domestic Angus results in a meat that’s exceptionally marbled and intensely flavored.
